3 Dessert Recipes: Chocolate Fudge, Choice Chocolate, Chocolate-Peanut Butter Bars




Chocolate Fudge

Ingredients: 
2 tbsp. unsweetened cocoa powder
1/2 cup heavy cream
2 tbsp. butter
4 oz. cream cheese
1/2 tsp vanilla
3 tbsp. sweetener of your choice

Instructions:
1.       In a small saucepan, over low heat, melt butter.
2.      Add heavy cream and cream cheese, and whisk until smooth.
3.      Add Splenda, and adjust for taste. (Add a little more if you need too)
4.      Heat until bubbling, stirring constantly.
5.      Reduce heat, and stir in cocoa and vanilla. Blend well.
6.      Pour into a small buttered dish.
7.      Place in the refrigerator to set for 3 to 4 hours.
8.      Cut into 8 pieces.

Choice Chocolate

Ingredients:
1 oz. unsweetened chocolate (the bar kind)
2 tbsp. butter
1 tbsp. cream or sour cream
1 tsp vanilla extract
8 packets equal
1 oz. crushed nuts (macadamias)

Instructions:
1.       Melt chocolate and butter, carefully.
2.      Remove from heat, stir in cream and vanilla, stir in equal, fold in nuts.
3.      Pour into tin-foil-lined something or other. Chill

Variations on a theme

    * Double the cream and the sweetener
    * Or, add 2 tablespoons of peanut butter
    * Or, pour into mini-muffin tins, then add 1/4 teaspoon PB to each candy.
    * Or, add 1 teaspoon peppermint extract.
    * Or, add ANY flavored extract (rasperry? cherry?)
    * Or, add twice the amount of mixed nuts w/o crushing for nut clusters




Chocolate-Peanut Butter Bars

Ingredients:
8 squares unsweetened chocolate
½ pound or 2 sticks of butter
1½ cups of unsweetened peanut butter
25 packets of Nutrasweet or any sweetener of your choice
½ cup of crushed walnuts


Instructions:
1.       Melt together unsweetened chocolate, butter, peanut butter, and Nutrasweet or any choice of sweetner.
2.      Pour into a greased cake pan.
3.      Cool for an hour.

Hot Artichoke and Spinach Dip Ingredients: 1 pkg. cream cheese 1 can 14 oz. artichoke hearts, drained, coarsely chopped 1/2 cup spinach, frozen chopped, or steamed 1/4 cup organic mayonnaise 1/4 cup parmesan cheese 1/4 cup romano cheese 1 clove garlic, finely minced 1/2 tsp. fresh basil (1 tbsp. dry basil) 1/4 cup mozzarella cheese, grated 1/4 tsp. garlic salt salt and pepper to taste Instructions: 1.  Allow cream cheese to come to room temperature. 2.
